Macaroni and cheese with bacon and bread topping

 You don't need any reason for eating comfort food ^^. Because it make you happy, and you deserve it.
There are so many thing in life, and we can live with happiness or regret but for me I choose the first one. Eating is one of my favourite time of the day, haha (ok, I'm greedy), but when starting by imagine what do you want to eat, enjoy each moment of preparing, making and yes, eating, it make me so happy. 
Maybe it's not only about food but it's the way we feel. If you can't eat what you want, thinking about food will bring you pain, and I know that many people have that problem. Food is joy when you keep it in moderation, even I love to eat sweet, dessert, cheese, chocolate and etc., I don't eat them everyday but when I want to eat it I always go for the real one.
Like this Macaroni cheese, it's not for fainted-heart person, haha. With a load of cheese, and bacon, this one is so rich. I didn't tell you to eat it everyday, but only once a week is enough to make you happy for many days, I promise. ^^




 Macaroni and cheese with bacon topping
Serve 2-3


110g ........................... Macaroni
25g ............................. Unsalted butter 
25g ............................. Plain flour
300ml ......................... Milk
50g .............................. Onion, sliced
50g .............................. Cheddar cheese, grated 
10g .............................. Parmesan cheese, grated 
1/4tsp .......................... Nutmeg, grated
..................................... Salt and pepper

Topping
1 slice ......................... Bread, cut into small cubes
85g .............................. Bacon, cut into small pieces
20g .............................. Cheddar cheese, grated 
5g ................................ Parmesan cheese, grated 
10g .............................. Spring onion, finely sliced


 



Preheat an oven to 180C.



 Boil water in a saucepan, and add 1 tsp of salt.
Pour the macaroni into the pan, and boil follow the package instruction.
Then remove from the heat, drain and set aside.


Place 14cm saucepan or low heat, put the butter into the pan, when the butter melt, add the flour and stir to combine.
Pour the milk into the pan, then add the onion slices, stirring from time to time until it thicken.


Remove from the heat.


Add boiled macaroni, both kinds of cheese, nutmeg, and season with salt and pepper.


Place the bread cubes, and bacon on top.




Sprinkle with both kinds of cheese, and spring onion.

Bake for 35-40 minutes or until golden brown.
