Happy Cooking with LG SolarDom: Pistachio and cranberry white chocolate truffle

 Next month is December and I believe you feel the way I feel, the giving season is coming.

 I started thinking about making beautiful gift from my kitchen, something cute hehe. Then I remember that I got this method from the chocolate school and want to show you how easy to tempering the chocolate in the microwave. With my LG SolarDom, I can create lovely gift too. Tempering chocolate in the microwave, you need to use low power, I use only 360w, and heat only 1 minute and stir. You can't let the chocolate melt completely in the microwave, because the heat is inside the chocolate too. Stop when some part of the chocolate melt, and stir until completely melt. Plastic bowl is recommended because it retains heat less than glass or ceramic, so you won't over heat the chocolate.
Let the truffle mixture firm up overnight is better than rushing the process, the chocolate will set perfectly and you will be able to roll it with your hand ^^. 
For the recipe I mix pistachio and cranberry with white chocolate. The sourness of the cranberry cut out the sweetness of the white chocolate while pistachio add richness and lovely fragrance. Not only that the taste is good the truffle itself is very cute too, hehe. 
*Depend on your taste the this chocolate truffle is delicious with or without chopped pistachio. 


Pistachio and cranberry white chocolate truffle 
Makes 12-13 pieces 


 100g .................................. White chocolate, chop if large 
40ml .................................. Whipping cream
40g ..................................... Pistachio
20g ..................................... Dried cranberry
For coating
120g .................................... White chocolate, chop if large 
60g ...................................... Pistachio, roasted and finely chopped 


 Put the pistachio on a pan.
 Select convection function, 160°C 
Warm the oven for 5 minutes.
Put the pistachio in the oven and bake for 5-6 minutes or until golden.


 Chop the pistachio and cranberry into fine pieces.
Put the whipping cream in microwavable cup.
Place the whipping cream cup in the microwave.
Select microwave function, 900W, set timer to 40 seconds, then push start.


 Remove the cup from the microwave, pour the white chocolate into the cup, stir until melt.
Put pistachio and cranberry into the cup stir to combine.
Pour the mixture into the pan, let it firm up (12 hours or overnight).
 When the chocolate firm enough, roll the mixture into a ball (about 12-13 pieces). 
 Put the 90g of white chocolate in a microwavable bowl, (plastic is better than glass or ceramic).
 Place the chocolate bowl in the microwave.
Select microwave function, 360W, set timer to 1 minute then push start.
 Remove from the microwave stir.
Select microwave function, 360W, set timer to 1 minute then push start.
 Remove from the microwave stir again, repeat the process until the chocolate melt, most of them will start to melt, remove from the microwave and stir until melt completely.
Pour the rest of the chocolate (30g) into the bowl, stir until melt completely (if the chocolate doesn't melt, put the bowl in the microwave, select microwave function, 360W, set timer to 10-20 seconds then push start.)


Line a baking sheet with baking paper.  
Dip the chocolate in a white chocolate bowl, then cover it with chopped pistachio.
Place on a baking sheet.
You can cover it with only white chocolate ^^.
After finish covering, refrigerate the truffle for 15 minutes to make the chocolate set.
Remove from the fridge and put in a box, you can keep it for 3-4 days at room temperature (or 2 weeks in a fridge).
